Easy Baked Zucchini Fries Recipe
For fellow food gardeners out there, I’m sure there’s a very high chance that you are currently being inundated with zucchinis! In our garden, we’re getting a new zuke every couple of days and we simply can’t keep up and that’s including gifting them to neighbours and friends already.
I’ve been looking for interesting new ways to use zucchini and today I’m sharing a recipe that’s highly efficient in using up zucchinis. Plus, no deep frying is involved, it only uses a handful of ingredients AND is so easy to make at home!
RECIPE:
Gives purpose to 2 medium zucchinis!
INGREDIENTS:
2 medium zucchinis (or 1 and 1/3 large zucchinis - oops I left mine in the garden for too long)
1 cup panko
1/4 cup parmesan cheese
1 tbsp dried herbs (mixed herbs, oregano, basil, any will do!)
2 eggs
1/4 cup flour
HOW TO MAKE:
Preheat oven to 180 degrees fan-forced.
Cut zucchinis in either potato fry like shapes, or circle slices.
Prepare 3 bowls for dipping.
1st bowl: flour.
2nd bowl: 2 eggs, mixed.
3rd bowl: with panko, parmesan cheese and dried herbs, mixed.
Time to dip! First dip your zucchini in flour, then cover it in egg, then dip in batter.
Line these up on a tray with baking paper and bake for 15 minutes or until golden brown.
